Question 1

Monosodium glutamate is a common flavour enhancer that is used particularly in Vietnamese and Japanese cooking. Why is it so popular in these cuisines and, more how does it enhance the flavour of food?

Tea or coffee?

Question 2

I read recently that tea contains more caffeine than coffee. I have often heard this quoted before, but my own experience is that this can't be true. If I drink a good strong cup of cappuccino, the jolt of the caffeine makes me feel like a nervous wreck for several hours afterwards. However, I often drink a cup of tea before bedtime, and subsequently get a very sound night's sleep. Do tea and coffee have different effects or does the caffeine level depend on the type of tea or coffee? Are there different types of caffein?

I dont really know which one of those two has more caffeine but the fact is that: People in the US have slowly replaced coffee by tea because they think that its healthier to drink tea. Thats why big coffee shop like Starbuck in the US now really concern about developing different kind of teas, like organic tea. Also I think tea and coffee have different effect on different ppl. For some, a lil coffee can make them stay awake for all nite. But for many, coffee doesnt work at all...

In fact, tea does contain more caffeine than coffee, but only by net weight, not by its final concentration in beverage. Becase more ground coffee than tea leaves is used to make a cup so typically a cup of coffee ends up with higher caffeine concentration .

to qestion 1

Monosodium glutamate is commonly used in oriental cooking for traditional reasons. For thousands of years the Japanese have used seaweed in their cooking to make food taste better. Only until19th century the actual ingredient responsible for that taste was found out tobe glutamate.First glutamate was produced by means of extraction which was very slow and expensive.Nowadays, massive amount of monosodium glutamate has beenproduced every year involving the fermentation of sugar cane

I don't know exactly why monosdium has such meaty taste. But presumably, that taste is the result from reactions between glutamate and proteins receptors on our tounge

Food tastes more salty if the salt is added at the final moment of cooking

rather than if its added before or during the early stages of cooking. Is

this true?, if not what is the case?

Nope. You know a week has 7 days right? How come that man just stayed in Liverpool for 3 days then came back on Friday also? Good try though, friend. Think a little bit more about it, this is a tricky question.

Okay, I want to make sure this one will not cause anymore confused pop-up questions. Here it is again:

"A British man ride to London on Friday, came visit Liverpool and stayed there for 3 days. Then he came straight back to London on Friday. No long break in between. How can it happen?"

Legend: Both London and Liverpool are in England. Distance betwwen them = 319 kilometers = 198 miles (too clear huh )

Actually I need to confirm again, this is a tricky question. Hint: think about one famous novel. Thanks for replying, tbkle and "anh Chinhquai"...

Not a problem, I bet it helps haha  (joking!) However,
"...

There are tons of famous novels :yxauho: Sorry about that hehe. If I tell you the name of that novel, then the answer is figured out too easily. Here is another hint: it is an adventure novel, written by Daniel Defoe. Things took place in a small island near Trinidad in seventeenth century. Again, this is just the hint for the answer of my question. Have fun...

Tùng: You got it. The answer for this question is: the man's horse is named Friday. So he rode from London to Liverpool and came back 3 days later on the same horse. Hope it's clear.
